Yuh forget the most important ingredient in the thing ...........
Breadfruit....... Without Breadfruit all you would be making is a Calaloo soup...........

Oil down recipe
INGREDIENTS
½ pound smoked ham, diced or pig tail, salted beef or exclude the meat
1 tablespoon vegetable oil
1 large onion, minced
2 seasoning peppers (or substitute 2 Yellow Wax Hots), seeds and stems removed, chopped fine
1 clove garlic, minced
½ Congo pepper (Habanero), seeds and stem removed
1 bunch green onions, chopped fine including the tops
2 teaspoons fresh minced thyme or 1 teaspoon dried thyme
4 cups Coconut Milk
1 large breadfruit, peeled and cut into 8 sections (or substitute canned breadfruit)
Salt and pepper to taste
METHOD
Place the ham in a saucepan, cover with water, and bring to a boil. Reduce heat and simmer for 20 to 30 minutes, until the ham is tender, skimming off any foam that rises. Drain the ham and set it aside.
Heat the oil and sauté the onions, peppers, garlic, Congo pepper, green onions, and thyme for about 5 minutes, stirring constantly. Add the coconut milk, heat, and then add the breadfruit sections, the ham, and salt and pepper.
Simmer, covered, for about 30 minutes, or until the breadfruit has absorbed all the coconut milk. Serve hot.

ain't no real recepie feh oil down...yuh got most ah de ingredients right but yuh method all wrong baby...put in yuh salt meat, ham or beef,cut up yuh provision(produce), roll yuh flour pour yuh grated & strained coconut, add yuh safron or a lil bit ah curry(if yuh cyan find safron), put yuh calaloo on top and let it koosoomay :D

but you know the grenadian recipe differs from the trini one. my aunt's boyfriend is and they change it up a lil bit, but it still tastes good :D

3 pounds salt mackerel soaked over nite and bones removed
2 quarts FRESH coconut milk NO CANS
1 scotch bonnet whole pricked with a fork or seeded and minced
several garlic cloves crushed
6 tomatoes chopped
2 onions chopped
3 sliced scallions
several sprigs thyme
2 green bananas peeled and sliced
1 t black pepper
1 T salt
2 T vinegar
All I do is start to boil the coconut milk and put in everything but the fish and vinegar. When the coconut milk is starting to get thick I put in the fish. you must take care not to have the heat too hot so it doesn't burn or boil over.Just at the end when the coconut milk is stuck to everything I add the vinegar. You can squeeze a little lime too. you can cut the recipe in half. you can also substitute any starch for the bananas or part of the fish. have made it with yam,dasheen,breadfruit, whatever is around.i have even used salt cod or smoked mackerel too.sorry i don't know what to do with the pork.
